Nasi kerabu is a Malay rice dish, a type of nasi ulam, in which blue-coloured rice is eaten with dried fish or fried chicken, crackers, pickles and other salads. The blue color of the rice comes from the petals of Clitoria ternatea flowers used in cooking it.
Nasi Kerabu is a popular traditional food from Kelantan. This food is not only popular in Kelantan but also in all state in Malaysia. No wonder if every state sells Nasi Kerabu. Moreover, it is also served with Ayam Bakar and sambal fried. Fuhh marvellous!
This time we share with you a complete recipe to prepare a Kelantan verse of Nasi Kerabu. We include it with a nice side dish. Enjoy it!
RECIPE OF NASI KERABU. SEDAP SENGOTI!

INGREDIENTS FOR RICE
– Rice
– Pandan leaf
– Water
– Kaffir lime leaves
– Blue dyes/ clitoria ternatea flower
** Cook the rice like usual.
INGREDIENTS FOR SAMBAL KELAPA GORENG

– Tuna/grilled selayang fish (other fish not tasty)
– Garlic/red onion (blend)
– Lemongrass/ginger (blend)
– Palm sugar/blackpepper (blend)
– Salt/budu
** Stir in marinate ingredients, if it’s ready, put in a bowl. The fish should be crushed and mixed with sauteed. Mix smoothly. Then mix with the fried coconuts. Okay ready!
INGREDIENTS FOR SAMBAL TUMIS

– Red onion/garlic/dried chili/ginger (all need to be blended)
–Lemongrass/ santan/budu/asam keping
–Kaffir lime leaves
**Blend the onion/dried chillies/ginger. If it’s ready and break the oil, put the lemongrass and budu in. Cook until gravy is rather thick. Then, add coconut milk, palm sugar, salt, sugar, asam keping, lime leaves. Let it boil.
INGREDIENTS FOR AIR LADA

– Chili
– Salt
– Vinegar
– Water
**Blend all the ingredients until smooth.
INGREDIENTS FOR AYAM BAKAR MADU

– Red onion/garlic/ginger/blue ginger/lemongrass.
– Pepper powder/blended chili/turmeric powder/sweet cumin/chicken cube/curry powder.
** Blend the ingredients above and marinate the chicken in 30minutes. Steam, marinate and grill.
ULAMAN

– Bean sprouts
– Ulam raja
– Kesum leaves
– Bunga kantan
– Cabbage/long beans
**All finely sliced.
Other ingredients: fish crackers and salted eggs.
